Fair Trade Banana Bread
The greatest thing since sliced bananas! 😋 This bread is a real celebration of some wonderful Fairtrade certified products, and yes, it is 100% tastier this way. It does take a little bit of time and work, but with a delicious, vegan-friendly pay off like this, who could resist?
Ingredients
4 overripe, gooey bananas (we're subbing 3 bananas for 2 eggs, including another banana for garnish)
4 tbsp melted salted butter (feel free to substitute this one with coconut oil and a pinch of salt)
1-1½ cup almond milk
1 dash vanilla extract
½ tsp cinnamon
2 cup whole wheat flour
3 tbsp whole brown sugar
2 tsp baking powder
½ cup chopped walnuts or (vegan friendly!) chocolate chips
Recipe
Preheat oven to 350°F/180°C
Mash 3 bananas to desired consistency (we like to leave them a little chunky) in a large bowl
Add all the wet ingredients into the bowl and mix
Add whole wheat flour to the bowl
Sift all remaining dry ingredients in and mix until just combined
Gently mix in your walnuts/chocolate chips
Pour batter into a lined loaf tin
Garnish by lightly pressing the sliced banana and walnuts on top of the batter before placing in the oven
Cook for 45-60 minutes.
Pro tip: if you stick a toothpick into the middle of the loaf and it comes out clean, it's ready! Let the loaf rest for about 10 minutes before removing from the pan, then place on a cooling rack for 10 more minutes before-- ah who're we kidding, we've already started eating it.
