Yes, that's exactly what we're doing -- but only for the HSM volume. The "primary" store is on iSCSI-connected SAN storage (NetApp back-end).
We've only had HSM turned on for a few weeks so far, but no reported problems. We did have the NFS server crash a couple of weeks ago (we've not found the Thumpers running Solaris to be the most reliable servers around!), but due to the way we've got the mounts set up, our Zimbra environment rode through it well.
Re: Zimbra on Solaris -- perhaps now that OpenSolaris is becoming mainstream (with purchased support available), the Zimbra folks will consider it. It uses a packaging system that's much more Linux-like, so getting the necessary prerequisites in place should be a lot less painful. Sure would be nice to have Dtrace and ZFS at our disposal..
