I found one the other day that John Holder had recently opened. I added some comments then...but have added some more just now to clarify what I'm looking for personally.

I talked to our doc lead. We do not have an updated doc at this point. We have some new documentation resources that just joined so we do have cycles for expanding our documentation efforts.
Matt - Can I ask you guys to create a bug with specifics of what you want? I can get it in the queue and give you feedback on timing.

Good luck with your quest. Our developer couldn't really find much to go on and essentially used existing Zimlets as a guide. If you look at the code for enough of them, you can get ideas for how to accomplish just about anything.
Not ideal, I know, but I get the sense that the Zimbra folks are innovating so fast that documentation is sort of taking a back seat (and lets face it, how many developers like documenting??)
